Easy jam drops
These jam drops are delicious and a great activity for the kids as well. You can make a whole biscuit barrel-full but I doubt they will last long. Choose your favourite jam!

ingredients
- 6 tbs butter
- 1/2 cup sugar
- 1 egg
- 1/2 tsp vanilla essence
- 1 3/4 cups self raising flour, sifted
- 1 pinch of salt
- 1/2 cup raspberry jam
method
- 1. Preheat oven to 180°C (160°C fan-forced). Cover 2 baking sheets with baking paper and set aside. Cream the butter and sugar together until pale.
- 2. Add egg and vanilla and beat well.
- 3. Add flour and salt and mix well.
- 4. Roll teaspoonful-sized balls of batter and place on the baking tray 2 fingers apart. Using the end of a wooden spoon make a well in the centre of each ball.
- 5. Fill each indentation with a quarter of a teaspoon of jam. Bake for 10-15 mins.
notes
- Basic pantry ingredients will get you a mountain of delicious biscuits to feed the masses.
- Make sure you give these enough space on the baking tray to spread.
- These are perfect for afternoon tea.
- Kids love helping to make biscuits but as the jam can get quite hot in this recipe, why not have fun with cookie cutters and make shaped biscuits instead.
- Jam drops go with a cup of tea like chocolate-chip cookies go with hot milk.
