Mini Puff Pastry Apple Rose Recipe

Do you guys ever see stuff on Pinterest or Facebook and become obsessed? It happens to me quite a lot, probably because I look at so many food photos. But it’s rare that I keep thinking about it and thinking about it until the point where I actually make it. I have so many recipes tagged that I want to make, but because I’m always acquiring new ideas and recipes, I hardly ever actually make the things I intend to. Well, that changed with these little puff pastry apple roses.

I’ve seen so many iterations of apple roses online, each more beautiful than the last. So, when I had a couple of apples lying around I bit the bullet and made these mini apple rose tarts. They’re super simple to put together and fun to eat too. They’re basically a rolled up version of an apple tart.

If you make these, here’s my number one tip: roll out your puff pastry. Usually I buy pre-rolled puff and don’t roll it out at all. But with these guys, since they’re rolled up so tightly, you need to make sure the pastry isn’t too thick or it won’t cook in the middle. Ditto on the slices of apple. I sliced mine really thin to make sure they were pretty pliant, but I’ve seen other people do them with thicker slices. Oh, and last tip: make sure you serve these with a scoop of ice cream – that warm-cold combo is absolutely the best!

Mini Puff Pastry Apple Rosesvia Cooking with Manuela
makes 6 larger roses or 12 minis


  • 1-2 RED APPLES, CORED AND SLICED AS THIN AS POSSIBLE
  • SQUEEZE OF LEMON JUICE
  • FLOUR, TO DUST
  • 1 SHEET FROZEN PUFF PASTRY, THAWED
  • 3 TABLESPOONS APRICOT PRESERVES
  • 1/8 TEASPOON CINNAMON
Lightly butter a muffin tin. Preheat the oven to 375°F.
Place the apple slices in a bowl with the lemon juice and cover with water. Microwave until the slices are slightly softened (this will help you when you’re rolling up the roses), about 3 minutes.
Lightly flour your workspace and roll out the puff pastry as thin as possible, keeping it in a rectangular shape. You want the pastry to be fairly thin – if you leave the puff too thick, it will have issues baking all the way through. Trim the pastry into 6 or 12 strips, depending on if you are making mini or regular roses.
Mix the apricot preserves with 2 tablespoons of hot water and stir well. Brush onto the puff pastry. Place the apple slices on the puff, about halfway down, overlapping. Sprinkle with a touch of cinnamon, if using. Fold up the puff pastry and gently roll up (don’t roll them too tight), placing into the prepared tin when done.
Bake until puff is golden brown and cooked through, 40-45 minutes. If the apples start to brown too much, cover with a piece of foil. Remove, let cool, and enjoy!

How the heck did Christmas sneak up so quickly!? I’ve been so busying being jet-lagging, baking, and merry making that I didn’t even notice that Christmas is in two days! What are your plans? Mine involve a Christmas-y hot pot dinner with my family and a Mike and I collaborative Christmas day menu – I’m making a ducken (that’s a duck stuffed with a chicken) and he’s doing the sides. I’m super excited.

Of course, there will be cookies for dessert. Cookies like these marzipan chocolate chip beauties. When Molly and Alana invited me along to a lil marzipan dance party, I knew I had to make cookies because you can definitely dance and eat cookies at the same time, especially these golden brown, crispy on the edges and perfectly gooey and soft in the middles cookies studded with chocolate and marzipan.

Are you guys fans of marzipan? If you like almonds, then you’re a fan of marzipan even if you don’t know it. If you’re a big marzipan fan, you should totally go to Germany because they have marzipan EVERYTHING. I brought some back with me and it was soft and almond-y and basically a marzipan dream. Seriously, I had the best time in Berlin at the Christmas markets. They really know how to celebrate Christmas over there.

And while they had loads of pretzels, wursts, steins, bethmännchen (traditional German marzipan cookies), what they didn’t have were chocolate chip cookies. So this mash-up of a marzipan chocolate chip cookie is my little ode to Christmas in Germany. I riffed off of myall time favorite chocolate chip recipe by adding in marizpan balls. At first I stirred in the marzipan balls, but then I realized that you couldn’t really tell that the marzipan was in the cookies, so I started popping the balls on top. You can do either, but I ended up liking the ones where the marzipan was incorporated into the dough.

Marzipan Chocolate Chip Cookie Recipeadapted from Not Without Salt
makes 12-18 cookies


  • 1 STICK BUTTER (1/2 CUP)
  • 2 TABLESPOONS WHITE SUGAR
  • 2 TABLESPOONS TURBINADO SUGAR
  • 3/4 CUP PLUS 2 TABLESPOONS BROWN SUGAR
  • 1 LARGE EGG
  • 1 TEASPOON VANILLA
  • 1 3/4 CUPS ALL PURPOSE FLOUR
  • 3/4 TEASPOONS BAKING SODA
  • 1/4 + 1/8 TEASPOON SALT
  • 1/2 POUND DARK CHOCOLATE FÉVES OR 1/2 POUND DARK CHOCOLATE CUT INTO ROUGH 1/2 INCH CHUNKS
  • 100 GRAMS MARZIPAN, CUT INTO SMALL CHUNKS OR ROLLED INTO SMALL BALLS
  • 1/4 TEASPOON FLAKY SEA SALT, FOR SPRINKLING
Preheat the oven to 360°F.
Cream the butter and sugars until light and fluffy (5 minutes on medium speed if using a mixer). While the butter and sugar is creaming, whisk together the flour, baking soda and salt in a small bowl. Set aside.
Add the egg and vanilla to the butter-sugar and mix until combined. Add the flour and mix, with a spatula, until barely combined. Fold in the chocolate and marzipan. Portion the cookies out onto a parchment paper lined cookie sheet. Sprinkle with the flaky salt and bake for 12 minutes, until the edges are golden but the centers are gooey. Let cool on the baking sheet for 5 minutes and enjoy warm!

This is the recipe that I’ve been eating for the last week and a half to keep myself eating something of nutritional value that actually tastes good to my mouth during this crazy End-of-December season. AND it’s the recipe that I am going to leave you with as we transition right into a lil’ break for Christmas!
For those of us who love Mediterranean flavors, the recipe/concept is salty and slightly acidic and bright and fresh, just like any good Greek-type salad bowl situation should be. FEEL THE LOVE, guys. You just sit right on back and feel the love.
This filling rainbow bowl is a mish-mash of quinoa, cucumbers or kale or spinach (fresh or sautéed – we’ve done all combinations and types of greens at our house), feta cheese, kalamata olives, pepperoncini eaten straight out of the jar because they are so salty and delicious I mean say what? 👅 Also red onion, hummus if you like, and basil or any other herbs, really.
Plus we’re adding a dollop of homemade roasted red pepper sauce which is basically EVERYTHING in my life right now.
…to the point where you could and maybe should just skip the bowl of quinoa-packed nutrition the first time around and just visit that roasted red pepper sauce with some thin and crispy rosemary crackers. Ohmygosh. Do it right now. These foods just know how to speak to us on a deep, personal level.
Sweet dedicated readers, I literally only have this one picture for today’s post. Are you a sad/mad about it? Because I am a little sad about it. Honestly – when does that EVER ever happen around here? Not often, but it is happening today because (good news) we have over 200 people that have applied for the Remote Office Managerposition ‼️ but (bad news) I DON’T HAVE AN OFFICE MANAGER YET. Which means that hiring for this position is a one-girl operation that is taking quite a bit of time.
So in light of all the things that are taking all the time and those tricky “regular” meals that are landing right in the middle of holiday parties and cookie-fests, I just have one thing to say to all of us: Mediterranean Quinoa Bowls. And/or Extra Roasted Red Pepper Sauce with Crackers.

MEDITERRANEAN QUINOA BOWLS WITH ROASTED RED PEPPER SAUCE

INGREDIENTS
Roasted Red Pepper Sauce:
  • 1 16 ounce jar roasted red peppers, drained (or roast your own red peppers and win the food game!)
  • 1 clove garlic
  • ½ teaspoon salt (more to taste)
  • juice of one lemon
  • ½ cup olive oil
  • ½ cup almonds
For the Mediterranean Bowls (build your own bowls based on what you like)
  • cooked quinoa
  • spinach, kale, or cucumber
  • feta cheese
  • kalamata olives
  • pepperoncini
  • thinly sliced red onion
  • hummus
  • fresh basil or parsley
  • olive oil, lemon juice, salt, pepper
INSTRUCTIONS
  1. Pulse all the ingredients for the sauce in a food processor or blender until mostly smooth. The texture should be thick and textured (see picture).
  2. Cook the quinoa according to package directions (I always do mine in a rice cooker while I get everything else ready). When the quinoa is done, build yourself a Mediterranean Quinoa Bowl!
  3. Store leftovers in separate containers and assemble each bowl just before serving, especially the greens and the sauces, as those will get soggy when stored with all the other ingredients.
NOTES
For a vegan version, replace the feta cheese with white beans.

Nutrition facts will be dependent on the amounts of each ingredient that you use. I left this recipe pretty open-ended in terms of amounts for each bowl which is why I didn’t include a nutrition label here. For a healthier bowl, obviously, load up on

I used to be quite the rebel when it came to sleep. I'd stay up until all hours of the night working on different projects and watching Youtube videos - some nights I'd be up until 4 or 5am! I'd usually have trouble falling asleep (and staying that way all throughout the night without waking up once or twice), so it was just easier to stay up and get work done. I've recently made an effort to follow a more normal sleeping schedule, and I've found a few tricks that work quite well at getting better sleep.
